The training course is an essential tool for the food handlers/processors and all those involved in the food industry. It provides the basic principles of food safety, hygiene and sanitation for implementing the food quality management system which is Hazard Analysis Critical Control Point (HACCP). The implementation is to ensure the product quality to meet the requirement of customers when HACCP is required, government regulation and to progress on quality and productivity for a competitive market. HACCP is also basic key for food industries to achieve the exportation.

PARTICIPANTS WILL:
  • Have knowledge on the basic principles of food safety, hygiene, sanitation and microbial, physical and chemical risks and control measures.
  • Understand the requirements of HACCP system and the task works for implementing HACCP system.
  • Understand guideline of Codex Alimentarious (CAC/RCP 1-1969, Rev. 4-2003).
  • Be able to prepare documents: Quality policy, Quality manual, Procedures, Records and Review records for correction and corrective action.
  • Have an overview of the food laws and regulations of Cambodia and prospect export countries/customers.

TRAINER
Dr. Davin Uy, Food Safety Specialist 
  • High University Degree and at least 5 years experiences in Food industries
  • Regional and international experience such as France, Vietnam and Indonesia.
  • Our trainers can offer GMP/GHP, HACCP, ISO 22000, ISO 9001.
METHODS
Besides short lecture, this training will include a lot of group discussions and role plays to encourage the participants to immediately put into real practices what they are learning and to enable the trainer to provide feedback.

 
ORGANIZER
Food Technology Services and Supplies Co., Ltd. and Park Café Food and Beverage Co., Ltd. used to train enterprises more than 1000 on both technology and food quality management systems including Good Manufacturing Practices and Good Hygiene Practices (GMP/GHP), Hazard Analysis Critical Control Point (HACCP) and ISO-22000, Food Technology and Laboratory Skills for improving the productivity and quality. We trained 60 national inspectors to improve the food safety in Cambodia. We used to provide consultation services to more than 150 factories and food processors who commit to improve the productivity and meet the quality requirement of their customers on food safety especially the exportation.

The training will be presided over and welcomed by H.E Rathanak Lim, Ph., Advisor of the Royal Government of Cambodia and Deputy Director of the Department of Drugs & Foods, Ministry of Health.
